Proper Pour is a sophisticated Imperial Stout that exemplifies the art of double-barrel aging. Initial maturation in bourbon barrels imparts deep notes of vanilla and charred oak, which seamlessly transition into a secondary aging period within Ruby Port casks. This process layers the beer with rich, jammy dark fruit flavors reminiscent of plum and raisin, underscored by a distinct aroma of bourbon and earthy tobacco. Despite its potent strength, the experience is remarkably cohesive, balancing the intense roasted malt with the velvet sweetness of the fortified wine influence, resulting in a luxurious, dessert-like complexity with a lingering vinous finish.
Appearance. Jet black and opaque (SRM 40+). Pours with a thick, deep tan head that shows moderate retention, leaving oily legs on the glass that signify its high viscosity and alcohol content.
Aroma. High intensity with a complex blend of charred oak, bourbon, and dark chocolate. Prominent notes of tobacco and dark fruits like prunes and raisins from the Ruby Port influence. Subtle spicy rye and vanilla undertones emerge as it warms.
Taste. An initial rush of bittersweet chocolate and espresso roast gives way to a lush, sweet mid-palate of black currant and fig. The bourbon barrel aging adds layers of caramel and toasted oak, while the Ruby Port barrels contribute a sweet, wine-like fruitiness. Bitterness is firm but well-balanced by the massive malt backbone. The finish is long and warming with a decadent, vinous aftertaste.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Low to moderate carbonation. A significant and smooth alcohol warmth is present throughout, contributing to the beer’s sophisticated and heavy presence.
