This decadent Imperial Stout offers a masterclass in liquid dessert architecture, layering the richness of traditional baklava onto a massive, bourbon-barrel-aged frame. Intense aromas of Orange Blossom Honey and toasted nuts lead into a velvety palate defined by the distinct, earthy oils of walnuts, hazelnuts, and pistachios. The base beer’s deep roasted malt profile provides a sturdy backbone of dark chocolate and espresso, while the high alcohol content is masterfully integrated, offering a soothing warmth. Vanilla and oak from the barrel time meld with the floral honey notes, resulting in a complex, harmonious, and lingering finish that captures every flaky, honey-drizzled nuance of its inspiration.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, deep tan head that shows low to moderate retention due to the high alcohol and nut oils. High viscosity is evident by the prominent legs trailing down the glass.
Aroma. High intensity and complex. Dominant notes of floral orange blossom honey and toasted nuts (walnut and hazelnut) are supported by a rich base of bittersweet chocolate, espresso, and black licorice. Bourbon barrel aging contributes strong vanilla, caramel, and charred oak, while low dark fruit esters of fig and raisin add depth.
Taste. Intense initial impression of honeyed sweetness and rich nuttiness. Deeply roasted malt flavors of cocoa and dark-roasted coffee balance the sweetness of the Orange Blossom Honey. Mid-palate reveals distinct earthy walnut, buttery hazelnut, and subtle pistachio. Moderate bitterness from roasted grains and hops provides balance against the high residual sugar. The finish is long and warming, showcasing bourbon-soaked oak, vanilla, and a lingering nut-skin character.
Mouthfeel. Full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low, accentuating the beer's weight. A significant but smooth alcohol warmth is present, reflecting the 15.56% ABV without being sharp or solventy. Noticeable creaminess and a slight oily slickness from the nut additions.
