Bottle Logic Brewing Red Eye November (2021)
This Imperial Stout presents a masterful fusion of barrel-aged intensity and artisanal coffee. Built on a base of spicy rye malt and bittersweet molasses, the sensory profile is dominated by a custom blend of El Salvadorian coffee from Mostra Coffee. Aromas of freshly roasted beans lead into a palate rich with baking chocolate and caramelized sugar. The high alcohol content provides a warming backdrop to notes of dark fruit and charred oak derived from its extensive bourbon barrel aging. Velvety and viscous, the beer balances the intense roast of the coffee with the deep, complex sugars of the malt and wood.
Appearance. Opaque, midnight black (40+ SRM) with a thick, dense, creamy tan head that exhibits excellent retention and leaves oily lacing on the glass.
Aroma. High intensity; dominant aromas of freshly ground coffee and espresso are layered over bourbon-soaked oak, vanilla, and spicy rye malt. Subtle notes of black cherry, molasses, and dark chocolate provide deep complexity with no detectable hop aroma.
Taste. Initial impression of dark fruit and bittersweet molasses transitions into rich baking chocolate and caramelized sugar driven by the El Salvadorian coffee. Significant rye spice and oak tannins provide structural balance against the malt sweetness. The finish is long and warming, featuring lingering notes of cold-brew coffee and toasted marshmallows. Bitterness is moderate but perceived as roasted grain character.
Mouthfeel. Full-bodied and viscous with a luxurious, velvety creaminess. Carbonation is moderate-low, and there is a significant, well-integrated alcohol warmth. Very low astringency from the coffee and oak.
