This West Coast IPA delivers a brilliant sensory experience centered on a complex hop quintet. It features a punchy, tropical fruit profile from El Dorado, which is balanced by the classic resinous pine and dank earthiness of Simcoe and Columbus. The heavy dry-hopping with Mosaic and Simcoe introduces vibrant layers of blueberry, citrus zest, and evergreen needles. It presents a clean, supportive malt backbone that allows the firm bitterness to shine, finishing crisp and bone-dry. This American IPA exemplifies modern clarity and hop-forward intensity while maintaining the refreshing, lean structure characteristic of its West Coast inspiration.
Appearance. Brilliant, clear medium gold (7 SRM) with a tall, dense white head that exhibits excellent persistence and leaves significant lacing.
Aroma. High intensity hop aroma featuring tropical pineapple, mango, and stone fruit, followed by deep notes of resinous pine, grapefruit peel, and a hint of dank herbs. Malt is low and clean, providing a subtle grainy-sweet foundation without distracting from the hops.
Taste. Leading with a medium-high to high hop bitterness that is firm but clean. Flavors of citrus zest, berry, and pine needles dominate, supported by a low, crackery malt character. Fermentation is very clean, allowing the hop complexity to remain the focus through to a dry, lingering, and bitter finish.
Mouthfeel. Medium-light body with a smooth, crisp texture and no astringency. Carbonation is medium-high, providing a lively mouthfeel that enhances the dry finish. Alcohol warmth is very subtle and well-integrated.
