Bottle Logic Brewing Paisley Cave Complex (2020)
This decadent Imperial Stout, a collaboration with Great Notion, presents an opulent sensory journey inspired by a lakeside campfire. Rich aromas of melted milk chocolate and toasted marshmallow intertwine with the bright, jammy essence of ripe blueberries and honeyed graham cracker. The extended barrel aging imparts deep layers of charred oak and bourbon-soaked vanilla that ground the sweetness. On the palate, the beer is immensely viscous and chewy, delivering a complex interplay of roasted malts and fruit-forward tartness. It concludes with a lingering warmth, a testament to its formidable strength, while maintaining a velvety, dessert-like harmony throughout.
Appearance. Jet black and completely opaque (SRM 40+). Pours with a thick, dark tan head that shows moderate retention, eventually settling into a dense ring. High viscosity is evident by the pronounced legs coating the glass.
Aroma. High intensity and extraordinarily complex. Leading with notes of bittersweet chocolate and toasted marshmallow, followed by a distinct jammy blueberry fragrance. Secondary layers reveal honeyed graham cracker, vanilla, and charred oak from the barrel, with a noticeable but well-integrated bourbon warmth.
Taste. Massive initial impression of dark chocolate and sweet berry preserves. The mid-palate features layers of graham cracker and marshmallow creaminess, balanced by a firm roasted malt bitterness and oak tannins. The finish is long and warming with a lingering sweetness of dark fruit and bourbon-soaked wood, avoiding being cloying despite the high density.
Mouthfeel. Very full-bodied, viscous, and chewy with a velvety, luscious texture. Carbonation is low to moderate, providing just enough lift. A smooth, noticeable alcohol warmth is present throughout, consistent with its high strength.
