This Double IPA showcases a sophisticated hop profile where Columbus and Centennial provide a foundational layer of soft pine and bright citrus. The sensory experience is dominated by aggressive dry-hopping with Mosaic and Citra, resulting in an intense aromatic display of tropical fruit. Despite the absence of real fruit, the palate experiences a vivid burst of mango, papaya, and a distinctive blueberry note. The neutral malt backbone remains unobtrusive, allowing the complex oils to lead into a clean, firm bitterness. At 8.5% ABV, it maintains excellent drinkability with a dry finish that leaves a lingering impression of resinous tropical zest.
Appearance. Deep gold to light copper in color with a slight, acceptable haze typical of modern hopping techniques. It supports a moderate-sized, persistent off-white head with fine-textured lacing.
Aroma. High intensity hop aroma featuring prominent tropical notes of mango and papaya, complemented by a unique blueberry character. Supporting scents of citrus zest and resinous pine are evident, backed by a very low, clean, grainy malt presence.
Taste. The flavor is hop-forward and complex, opening with tropical fruit and citrus before evolving into soft pine. High bitterness is well-integrated and not harsh. Mouthfeel. Medium-bodied with a smooth, slightly creamy texture. Carbonation is moderate-high, and a gentle, well-integrated alcohol warmth is noticeable but lacks any solventy harshness.
