The pour is viscous and ink-black, releasing a high-intensity bouquet of Madagascar vanilla beans and rich bourbon oak. Deep layers of roasted cocoa and charred wood from the bourbon barrels provide a sturdy foundation for the distinctive, savory nuttiness of fresh pistachios. The addition of lactose creates a luxurious, creamy profile that softens the robust roast. Each sip delivers a complex interplay of sweet cream, toasted nuts, and warming bourbon, finishing with a lingering, velvety sweetness that exemplifies a dessert-forward interpretation of the style.
Appearance. Opaque jet black (40+ SRM) with a dense, mocha-colored head that leaves a persistent rim and thick lacing. High viscosity is evidenced by slow-moving legs on the glass.
Aroma. High intensity; dominant scents of sweet Madagascar vanilla and oily, toasted pistachios are layered over rich dark chocolate and espresso. Significant bourbon barrel influence provides notes of caramel, toasted oak, and a hint of marshmallow. Low dark fruit esters like prune.
Taste. Intensely flavorful and sweet; initial impressions of vanilla cream and lactose give way to a rich, fudgy malt core. The pistachio flavor is prominent, lending a unique savory-nutty depth.
