Boréale Kohu is a vibrant American Pale Ale crafted in collaboration with Herman Brasserie Artisanale, designed for high drinkability. The addition of spelt creates a soft, rustic grain foundation that supports a bright hop profile featuring New Zealand cultivars Motueka and Wakatu. These hops drive intense sensory cues of fresh lime zest, lemon, and subtle tropical fruit. This sessionable ale balances its moderate bitterness with a clean, dry finish, making it exceptionally approachable. The interplay between the bready spelt texture and the zesty, citrus-forward hops defines its refreshing character, delivering a modern take on the style with distinctive Southern Hemisphere aromatics.
Appearance. Pale golden with a brilliant clarity, though the use of spelt may lend a very faint, attractive shimmer. It is topped with a moderately large, frothy white head that exhibits good retention and leaves delicate lacing on the glass.
Aroma. Moderate to high intensity hop aroma led by distinct lime and lemon zest from the Motueka and Wakatu hops. Beneath the citrus, a low grainy and slightly nutty maltiness from the spelt is apparent, complemented by subtle floral esters and a hint of tropical fruit.
Taste. The initial impression is hop-forward and refreshing, featuring prominent flavors of lime, citrus peel, and a touch of stone fruit. Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the spelt. Carbonation is moderate-high, lending a prickly, effervescent quality that enhances the refreshing character. No alcohol warmth is perceived, and there is no astringency.
