Borda Fusca presents as a deep, mysterious American Stout, blending traditional dark malt intensity with the smooth complexity of local ingredients. The presence of Aragon 03 wheat and oats provides a remarkably creamy, medium-full foundation that carries dominant aromas of freshly roasted coffee and bittersweet chocolate. While inspired by the dryness of classic black ales, its American character emerges through a firm bitterness and a subtle resinous hop backbone. The result is an evocative profile where the dark, roasted grains offer an exciting intensity on the palate, finishing with a lingering, clean roast character and a velvety, unpasteurized texture.
Appearance. Opaque, jet black (SRM 40) with a dense, persistent tan head that leaves significant lacing. Bottle conditioning provides a natural, slight turbidity typical of unpasteurized ales.
Aroma. High intensity roast dominates, characterized by espresso and dark cocoa. Subtle notes of resinous hops provide a secondary layer, accompanied by very low fruity esters and a faint grainy sweetness from the wheat.
Taste. Initial impression is of strong roasted grain, yielding flavors of black coffee and unsweetened chocolate. A medium-high bitterness provides balance against a low malt sweetness. The finish is medium-dry with a clean, lingering toasted character and a hint of earthy hop flavor.
Mouthfeel. Medium-full body with a notable creaminess and silkiness derived from the addition of oats and wheat. Carbonation is moderate to high, contributing to a lively mouthfeel without excessive roast-derived astringency. Alcohol warmth is light and well-integrated.
