This Oude Gueuze presents a masterful display of wild complexity and refreshing acidity, resulting from a meticulous blend of one, two, and three-year-old Lambics aged in oak casks. The sensory experience is headlined by a bright, balanced sourness that integrates seamlessly with sharp notes of green apples and zesty grapefruit. Its heritage is evident in the sophisticated funk, offering layers of hay and earthy leather. The palate is lean and structurally sound, leading into a distinctive bone-dry finish that is both long and crisp, showcasing the brewer's intent for a highly attenuated, elegant, and effervescent Belgian classic.

Appearance. Deep golden color (5-6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and an effervescent, lively carbonation.

Aroma. Moderately high intensity of complex wild funk, characterized by barnyard, leather, and hay. Bright fruity esters of tart green apple and citrus rind are prominent, supported by a faint, grainy wheat malt presence and a whisper of aged oak.

Taste. Initial sharp lactic sourness balanced by a low bready malt backbone. Dominant flavors of tart green apple and grapefruit pith lead to a complex funkiness on the mid-palate. Bitterness is nearly imperceptible, as the acidity provides the primary balance. Finishes remarkably clean and bone-dry with a lingering tartness.

Mouthfeel. Medium-light body with a soft, velvety texture despite the high carbonation. Highly effervescent and prickly on the tongue with a moderate puckering quality and a faint, well-integrated alcohol warmth.
