This powerhouse Belgian Dark Strong Ale pours a deep coppery-brown with a dense, tan head, reflecting ten months of patient maturation in American Oak whisky barrels. The sensory profile is a collision of monastic tradition and bold, punk character, offering an intense aromatic bouquet of dried figs, plums, and raisins layered over a bready, dark caramel malt base. The barrel aging introduces refined notes of vanilla and soft oak tannins that weave through spicy yeast esters. On the palate, a rich malt sweetness is expertly balanced by a dry, warming finish, delivering complex flavors of dark fruit and toasted malt with a smooth, lingering whiskey-tinged sophistication.
Appearance. Deep coppery-brown (18-22 SRM) with a huge, dense, moussy, and persistent light tan-colored head; excellent clarity despite the high gravity.
Aroma. High intensity with a complex blend of rich, bready-toasty malt and dark caramel. Strong esters of raisin, plum, and dried cherry are complemented by spicy black pepper phenols and prominent vanilla and toasted oak from the American Oak barrels. A soft, perfumy alcohol presence is noticeable.
Taste. Initial impression is rich and malty-rich with flavors of dark caramel and toasted bread. Deep fruit notes of figs and dates follow, accented by a whiskey-like character and vanilla. Bitterness is medium-low, providing just enough balance to a finish that is surprisingly dry and not syrupy. Harmoneous interplay between spicy yeast, oak tannins, and malt.
Mouthfeel. Medium-full body with a creamy, luxurious texture. High carbonation from bottle conditioning provides a lively lift. Significant but smooth alcohol warmth is present, without being harsh or solvent-like.
