This classic Double IPA strikes a bold balance between its medium malt body and an aggressive profile of American hops. It opens with an intense sensory strike of citrus, vibrant pineapple, and ripe stone fruit, delivering on its promise of a high-impact palate experience. The hop-forward character is supported by a clean, neutral malt backbone that ensures the bitterness remains crisp rather than cloying. At 8% ABV, a refined alcohol warmth emerges, enhancing the tropical notes without introducing harshness. It finishes dry and lingering, leaving a clean, resinous trail that defines the modern West Coast-influenced style.
Appearance. Gold to light orange-copper (SRM 7-10) with good clarity. Pours with a moderate-sized, persistent off-white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma characterized by bright citrus zest, tropical pineapple, and fleshy stone fruit. The fermentation profile is clean, allowing a supportive, grainy-sweet maltiness to sit quietly in the background alongside a very subtle, smooth alcohol note.
Taste. The initial impression is a bold surge of tropical fruit and citrus hop flavors. A moderately high bitterness provides a firm structure but lacks harshness, balanced by a soft, supportive malt character. It concludes with a dry finish and a long, clean, bitter aftertaste of resin and tropical skin.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is medium-high, providing a lively prickle. A restrained, pleasant alcohol warmth is present, reflecting its 8% strength without any astringency.
