This Straight Sour Beer is an intensely vibrant experience, delivering a sharp, electrifying sensory profile. It leads with a piercing aroma of fresh lime zest and ripe raspberry, underpinned by a clean lactic sourness that defines the style. The malt character remains subordinate, offering just a hint of crackery pale malt to support the aggressive fruit additions. On the palate, the raspberry provides a bright, jammy core while the lime contributes a citrusy tang that amplifies the beer's tartness. The finish is remarkably crisp and bone-dry, leaving a lingering, mouth-puckering sensation and a refreshing fruit-focused acidity that is intended to energize the palate.
Appearance. Pale reddish-pink hue (SRM 4-6) derived from fruit; slight haze to clear; moderate white head with a faint pink tint and poor retention; highly effervescent with visible carbonation.
Aroma. High intensity lactic sourness; dominant aromas of fresh lime and tart raspberry puree; low biscuity or crackery malt character; no hop aroma; clean fermentation profile without Brettanomyces funk or esters.
Taste. Sharp, clean lactic sourness is the primary impression, followed quickly by the tangy fruit flavors of lime and raspberry. Very low bready malt flavor; hop bitterness is undetectable; no hop flavor. The balance is heavily skewed toward acidity and fruit, finishing bone-dry and crisp with a lingering citrus tartness.
Mouthfeel. Light body; high carbonation; crisp acidity creates a puckering sensation; no perceived alcohol warmth; low astringency and very refreshing.
