Bollhayes Half-a-Sec
This traditional English Cider presents a refined balance of rustic complexity and approachable drinkability. At 6.5% ABV, it offers a core of ripe, orchard-fresh apple character supported by the gentle, earthy phenolics typical of West Country cider apples. The medium-dry profile, aptly named Half-a-Sec, ensures a clean, crisp palate without sacrificing the structural tannins that provide body and a sophisticated, slightly astringent finish. Subtle spicy notes and a faint floral undertone emerge as it breathes, creating a sensory experience that is both farmhouse-authentic and elegantly polished, showcasing a masterful fermentation that respects the natural sugars and acids of the fruit.
Appearance. Deep gold to pale amber; clear with a slight natural brilliance; very low, fleeting white head with minimal lacing; still to lightly sparkling.
Aroma. Moderate to high intensity of ripe culinary and bittersweet apples; subtle earthy and spicy phenolics; faint buttery notes and a hint of floral honey; no significant sulfur or acetic notes.
Taste. Initial impression is of rich, cooked apple juice followed by a firm, tannic grip; medium-dry balance with moderate acidity; light bitterness from apple tannins; finish is long, clean, and pleasantly dry with a lingering apple-skin character.
Mouthfeel. Medium body with a slight viscous quality; low to moderate carbonation; light, well-integrated alcohol warmth; noticeable but smooth astringency from the fruit tannins.

This is the same juice as in the Bollhayes Dry Cider but it has been slightly (and literally only slightly) sweetened with a small amount of sugar to create this medium/medium dry still cider. It has been made using the same apples (Yarlington Mill, Dabinett, Browns, Kingston Black, Chisel Jersey and Bramley) as go into their famous bottle fermented ‘cousins’, but only undergoing the single fermentation. Wild yeasts are used for the fermentation. The resulting cider is complex and develops well within the glass, and is excellent with food – especially cured meats and cheeses. The cider is a bright straw colour, with a fresh, clean, spicy floral aroma and a long, clean, full, crisp flavour. 500ml. 6.5%.
