Bollhayes Bottle Fermented Perry

This elegant Traditional Perry pours with a delicate, natural effervescence, showcasing the purity of the fruit through a traditional bottle fermentation with Champagne yeast. The aromatic profile is defined by refined floral notes and ripe pear, stripped of excess sweetness to highlight the vintage’s natural character and the terroir of the orchard. On the palate, it delivers a crisp, bone-dry experience where subtle tannins provide structure against a backdrop of clean pear esters. Its sophisticated finish is bone-dry and refreshing, bridging the gap between a fine sparkling wine and a traditional orchard cider, making it an exceptional companion for light fare.
Appearance. Pale straw to light yellow color. Brilliant clarity with a vigorous, fine-beaded carbonation typical of the traditional method. A thin white mousse forms briefly before receding to a persistent ring of bubbles.
Aroma. Moderate to high intensity of fresh pear and floral blossoms like elderflower. A clean fermentation profile from the Champagne yeast provides a subtle mineral quality and a faint hint of brioche, without any rustic funk or heavy phenolics.
Taste. Initial impression is bone-dry and crisp. Distinctive pear fruit flavors are present but restrained, balanced by a bright, clean acidity. Low to moderate tannin levels provide a pleasant structural grip on the mid-palate. The finish is remarkably clean and dry, with a lingering note of pear skin and subtle minerality.
Mouthfeel. Medium-light body with a sharp, lively carbonation that creates a prickly, refreshing sensation. Very low alcohol warmth despite the 7.6% ABV. Features a slight tannic astringency that dries the palate quickly.

It tastes just like how you remember pear drops tasting, delicate but full-flavoured, and lasting well on the palate.

Bollhayes Cider was established in 1988 by Alex Hill and his late wife Bee. They planted their cider orchard then and now it produces most of the cider apples and pery pears used in their ciders and perry. To say that Alex Hill takes cider making seriously is something of an understatement. He has a scientist’s attention to cleanliness and detail; an artist’s search for the complexity, interest and truth from a palette of flavours, and these combine to produce prize winning ciders.

His intention is that you should enjoy his passion…..drink Bollhayes with pleasure, with friends, with something lovely to eat, with a sigh of relief at the end of the day, in celebration, in your garden on a warm summer’s evening or around a December fire with winter cheeses and proper bread.
