Steen (2018) presents a masterful blend of multi-year lambic aged with white peaches, apricots, and red vineyard peaches. The sensory experience is led by an intense bouquet of fermented stone fruits, where the floral aromatics of white peaches and the tart, jammy depth of apricots meld with the earthy, rustic funk of the aged lambic base. Delicate notes of hay, leather, and horse blanket underscore the fruit, while a sharp, lemon-like acidity provides a bright structure. This Fruit Lambic is exceptionally dry, offering a complex, vinous finish where the subtle tannins of vineyard peach skins linger alongside a persistent, effervescent sparkle.
Appearance. Deep golden to pale amber (SRM 6-8) with a persistent, ivory, mousse-like head that leaves delicate lacing. Slightly hazy due to the significant addition of stone fruit and lack of filtration.
Aroma. High intensity; the primary profile is dominated by ripe apricots and floral white peach aromatics. Secondary layers reveal complex funk featuring horse blanket, hay, and a distinct lactic sourness. Hop character is absent, replaced by aged, woody notes and a faint, almond-like pit character.
Taste. A bracing initial acidity leads into a complex wash of fermented stone fruit. Apricot tartness and red vineyard peach skins provide a juicy but dry fruit character. The malt is a mere backdrop of wheat-like graininess. No hop bitterness is perceived. The finish is bone dry, clean, and highly acidic with a long-lingering funky aftertaste.
Mouthfeel. Medium-light body with a lively, effervescent carbonation that creates a prickly, refreshing sensation. Very low alcohol warmth. A light, pleasant tannic astringency from the peach and apricot skins adds structural complexity.
