This Fruit Lambic showcases an exceptional marriage between a complex blend of one, two, and three-year-old lambic and three varietals of fresh local raspberries. The sensory experience is dominated by an intense, jammy raspberry essence that interweaves with the signature funk of the aged base, offering notes of horse blanket, aged oak, and hay. The three-year-old component provides a deep, structural acidity that cuts through the fruit’s richness. Effervescent and bone-dry, the profile balances sharp lactic tartness with earthy depth, culminating in a lingering, fruit-skin finish that reflects its meticulous blending and traditional fermentation.
Appearance. Deep, brilliant ruby-red with pinkish highlights; slight haze from fruit solids. Features a dense, mousse-like, rose-tinted head with excellent retention and delicate lacing.
Aroma. High intensity of fresh, crushed raspberries and floral esters. Underlying complexity includes moderate Brettanomyces funk—leather, wet hay, and goatish notes—balanced by a sharp, clean lactic acidity and a hint of vanillin from the oak barrels.
Taste. Initial impression is sharply tart and intensely fruity, featuring vivid fermented raspberry flavors. No hop bitterness or flavor is present. The fermentation character is complex and acidic, showing aged lambic depth with earthy, wood-like notes. Finishes bone-dry and puckering with a long, elegant aftertaste of tart fruit and lemon zest.
Mouthfeel. Medium-light body with high, sparkling carbonation that provides a champagne-like effervescence. Significant tartness induces a mouth-watering sensation. A light tannin-driven astringency from the fruit skins and wood aging adds structure.
