Inspired by the pétillant naturel wine tradition, it presents a vibrant sensory profile where the earthy, dark-skinned character of Merlot grapes merges with the wild acidity of one and two-year-old barrels. Expect a "glou-glou" drinkability that balances deep plum and blackberry notes with the signature barnyard funk of the lambic base. The result is a refreshing, vinous experience, layering tart acidity with subtle grape tannins and a lively, natural effervescence that elevates the fruity, funky complexity of the fermented fruit.
Appearance. Deep ruby to garnet color with a pink-tinged, frothy, mousse-like head that displays moderate persistence. Clarity is slightly hazy due to the pet-nat inspired natural fermentation and grape solids.
Aroma. High intensity aroma dominated by fermented Merlot grapes, offering notes of ripe plum, black cherry, and earthy grape skins. This is layered over a complex lambic base featuring horse blanket funk, wet hay, and a sharp lactic acidity. Subtle oak and a hint of dusty cellar character are present.
Taste. Initial sharp lactic sourness is immediately softened by the rich fruitiness of Merlot. Flavors of dark berries and wine must dominate the mid-palate, supported by a low wheaty malt backbone. The finish is bone-dry and vinous, with a lingering tartness and a pleasant earthy funk. Hop bitterness is undetectable, allowing the grape tannins to provide structure.
Mouthfeel. Medium-light body with high, lively carbonation that provides a prickly, sparkling sensation. Moderate tartness provides a puckering quality without being harsh. Very low astringency from the grape skins adds a wine-like texture.
