This elegant Fruit Lambic showcases a harmonious marriage of one and two-year-old spontaneous ales infused with sun-ripened apricots from the Ardeche in France. The sensory profile opens with a vibrant, lactic-forward acidity that brightens the deep, fermented stone fruit character. Bofkont’s signature house funk provides layers of hay, leather, and barnyard complexity, beautifully integrated with the plush, fuzzy skin notes of the fruit. A refined dryness carries through the palate, balancing the jammy apricot depth with a sharp, refreshing tartness. It is a sophisticated expression of terroir, where the fruit’s natural sugars have been fully transformed into a complex, puckering masterpiece.
Appearance. Deep gold to soft orange hue (SRM 6-8) with a slight, natural fruit haze. Pours with a delicate, white, mousse-like head that leaves minimal lacing but maintains a fine collar.
Aroma. High intensity; dominant aromas of fermented apricot, peach skin, and dried orange peel. The wild character is evident through moderate notes of goat blanket, dusty hay, and a sharp, clean lactic tang. No hop aroma is present.
Taste. The initial impression is a bright, puckering lactic tartness followed by deep flavors of sun-drenched apricots and citrus zest. The malt is nearly invisible, providing just a lean, wheaty backbone. Hop bitterness is negligible. The finish is bone-dry and lingering, characterized by a complex interplay of funky fermentation and acidic fruit.
Mouthfeel. Medium-light body with high carbonation that creates a lively, prickly sensation. A notable tart, puckering quality is present without harsh astringency. Alcohol provides a very light, well-integrated warmth.
