This 2020 vintage Fruit Lambic showcases a sophisticated integration of Bergeron apricots from the Ardeche region. The base blend of one and two-year-old lambics provides a soft, lactic foundation that avoids sharp edges, prioritizing a creamy mouthfeel and approachable acidity. Bright, stone-fruit aromatics lead the profile, merging seamlessly with the characteristic Brettanomyces funk and aged wood notes. On the palate, the ripe, sun-drenched apricot flavor is vibrant yet matured, supported by a gentle wheat malt backbone and a dry, clean finish. It is a refined, fruit-forward expression that balances wild complexity with accessible, velvet-like textures.
Appearance. Deep gold to hazy orange (6–8 SRM); slight haze from apricot maceration; thin, white, mousse-like head with moderate retention.
Aroma. High intensity of ripe, jammy apricot and stone fruit flesh; moderate lactic sourness; complex wild funk (hay, aged wood, earthy Brettanomyces); no hop aroma.
Taste. Initial burst of fresh apricot skin and tart fruit; balanced by moderate lactic acidity and a soft wheat malt backbone; low bitterness; complex funky notes of leather and horse blanket; bone-dry finish with lingering fruit esters.
Mouthfeel. Medium-light body with a notable creaminess; moderate carbonation; very low alcohol warmth; low astringency from fruit skins and tannins.

1&2 jaar oude lambiek met abrikozen (o.a Bergeron) uit de Ardeche in Frankrijk. Deze blend wordt gekenmerkt door zijn melkzuurprofiel. -- Mijn eerste blend, dit bier symboliseert eigenlijk de start van het Bofkont-avontuur. Zoals elk jaar zijn de brouwers op zoek naar specifieke vaten met zachte lambiek- en melktonen. Dit is kenmerkend voor de Moonwalk blend, waarin de brouwers een fruitig en romig karakter willen bereiken. Dit wordt ondersteund door de zuren van de lambiek, maar deze domineren zeker niet de blend. Deze blend van 1 & 2 jaar oude lambiek gemacereerd met de bekende Bergeron abrikozen uit Ardechè (Frankrijk). De naam van deze blend heeft een grappige oorsprong, je kent vast wel een ander abrikozenbier en het karakteristieke etiket. De Moonwalk is hier dus een subtiele verwijzing naar. Zoals ik al zei, lambiek en abrikozen zijn een match made in Heaven.
