Appearance.Deep gold to amber-orange (6–10 SRM); displays a thick, rocky white head with excellent retention and persistent lacing; clarity is mostly clear with a faint, crystalline haze common in aged blends.
Aroma.High intensity; dominant aromas of fermented mirabelle de Nancy plums, skin tannins, and dried apricots. The funky lambic base provides complex layers of horse blanket, goat cheese, earthy leather, and dusty attic. Lactic acidity is sharp and bright, with virtually no hop aroma and very low wheaty malt presence.
Taste.Initial impression is sharply acidic and tart. Flavors of sour plum and lemon zest are followed by complex Brettanomyces funk, including hay and aged wood. The mirabelle de Nancy provides a subtle floral note and a hint of stone fruit pit bitterness. No hop flavor or bitterness (0–5 IBU context); finish is bone-dry, crisp, and extremely refreshing with a lingering, puckering fruit skin aftertaste.
