This Fruit Lambic opens with an assertive lactic tartness and complex spontaneous fermentation notes of hay and barnyard funk. The redcurrants contribute a sharp, vibrant acidity, while the yellow peaches provide a delicate, fleshy stone fruit depth that rounds out the dry, oak-aged character. The result is a highly structured, farm-matured ale where the fruit is seamlessly integrated into the wild, earthy backbone, leading to a crisp, bone-dry finish with a lingering berry-skin pucker and a hint of rustic complexity.

Appearance. Deep salmon to soft ruby-orange in color; hazy with a thick, rocky, and persistent pink-tinted white head that leaves significant lacing.

Aroma. High intensity; dominant aromas of tart redcurrant and fermented yellow peach skins. Strong wild character with notes of barnyard funk, horse blanket, wet hay, and subtle aged oak.

Taste. Highly acidic and tart initial impression; intense redcurrant sharpness and fleshy peach flavor. Very dry finish with complex notes of leather, earthy funk, and a faint wheat malt backbone. Zero hop bitterness; acidity provides the structure.
