This sophisticated blend from Boerenerf showcases the rustic elegance of spontaneous fermentation, marrying young and old Lambic with a vibrant maceration of raspberries and Muscat Bleu grapes. The sensory profile is defined by a bright, lactic tartness that perfectly balances the jammy, red-fruit intensity of the raspberries and the floral, tannic depth of the grapes. Earthy notes of hay, aged hops, and characteristic horse-blanket funk emerge from the wood-aged base, while a subtle backbone of raw wheat and Pilsner malt provides structure. The experience concludes with a bone-dry, vinous finish that highlights the complex interplay between wild yeast and heritage fruit.
Appearance. Hazy, deep ruby to violet-pink with purple highlights (15-25 SRM); soft, pink-tinged head with fair to poor retention, typical of fruited acidic ales.
Aroma. High intensity; dominant fresh raspberry and floral grape skins over a complex funk of barnyard, hay, and light goatiness. Subtle bready wheat and grainy malt underpin the fruit, with zero hop aroma.
Taste. Initial sharp lactic sourness followed by rich raspberry and dark grape flavors. Minimal bready malt presence; hop bitterness is below the sensory threshold, with acidity providing the primary balance. Funky, earthy Brettanomyces character develops mid-palate, leading to a bone-dry, puckering, and lingering fruit finish.
Mouthfeel. Medium-light body with moderate carbonation. Significant tart, puckering quality without being overly harsh. A light vinous astringency from the grape skins and a subtle, well-integrated alcohol warmth.
