Bodega Ergo Gran Durazno is a sophisticated interpretation of a Saison, elevated by the addition of peaches and a secondary fermentation with Brettanomyces in wooden barrels. It offers a vibrant sensory profile where sharp lactic acidity meets the succulent, ripe sweetness of stone fruit. The Brettanomyces imparts a characteristic rustic funk, suggesting notes of horse blanket and dry hay that mingle with the delicate tannins and soft vanilla derived from barrel aging. This high-ABV wild ale maintains an effervescent elegance, balancing its tartness with a complex, earthy depth and a crisp, bone-dry finish that highlights the fruit's natural essence.

Appearance. Deep gold (6 SRM) with a slight haze from the addition of peaches. It features a dense, white, frothy head with moderate to poor retention and fine, effervescent carbonation.

Aroma. High intensity lactic sourness leads the profile, accompanied by prominent aromas of ripe peach and apricot. Significant Brettanomyces funk is present, contributing earthy notes of leather and wet hay, supported by a subtle oak and vanilla character from barrel maturation over a light, crackery malt base.

Taste. The initial impression is a sharp, clean lactic tartness followed by a burst of fleshy peach fruitiness. Complex fermentation character includes rustic funk and a spicy phenolic edge. Hop bitterness is undetectable, allowing the wood-derived tannins and faint vanilla to emerge mid-palate. The finish is bone-dry and acidic with a lingering stone fruit and earthy aftertaste.
