Miss Pinky is a vibrant, modern take on the traditional Berliner Weisse, elevated by the addition of 100kg of fresh, locally sourced raspberries. This infusion transforms the classic profile into a sensory celebration of summer fruit, married perfectly with a clean, sharp lactic sourness derived from a dual-strain Lactobacillus fermentation. The aroma is dominated by bright, jammy raspberry notes and a hint of sourdough wheat, leading into a bone-dry, highly effervescent palate. With its low alcohol and crisp finish, it offers a refreshing, tart fruit experience that remains light and elegantly balanced, showcasing a sophisticated harmony between acidity and fruit.
Appearance. Deep pink to vibrant reddish-pink hue. Large, dense, light-pink-tinted head with poor retention. Slightly hazy to hazy due to the heavy fruit addition and wheat proteins.
Aroma. High intensity of fresh, tart raspberries dominates the profile. A moderate, sharp lactic sourness provides a crisp edge, accompanied by light notes of raw bread dough and sourdough wheat. Hop aroma is absent. Subtle floral esters from the secondary ale yeast fermentation linger in the background.
