This blend of spontaneous and mixed-fermentation bases features the rustic texture of flaked spelt and a sophisticated hop profile of fresh Saaz and Kazbek alongside aged hops. Extensive aging for up to four years in Scottish whiskey, French oak, and cider-bourbon barrels imparts a profound depth. Expect a vibrant sensory journey defined by aromatic lemon balm and the tart, vegetal snap of Stockbridge Arrow Rhubarb. High effervescence carries a complex, dry funk through a finish that elegantly balances heritage grain character with multifaceted wood nuances.

Appearance. Pours a hazy, pale straw to deep gold (SRM 3-6). It exhibits a lively, fine-beaded effervescence supporting a thin but persistent white head that leaves moderate lacing.

Aroma. High intensity aroma featuring a sophisticated blend of rustic funk—wet hay and earthy barnyard—tempered by bright lemon balm and tart rhubarb. Floral and spicy notes from Saaz and Kazbek hops mingle with faint vanilla, toasted oak, and a subtle whisper of whiskey and cider-bourbon spirits.

Taste. The initial impression is bone-dry and refreshingly tart. Flavors of zesty lemon and crisp rhubarb dominate the palate, supported by the earthy, nutty profile of flaked spelt. Hop bitterness is low, allowing the complex Brett-driven esters and aged wood tannins to shine. The finish is exceptionally clean and lingering, with a delicate herbal aftertaste.
