This complex Saison presents a masterclass in blending, marrying a three-year-old barrel-aged mixed fermentation ale with a vibrant fresh counterpart. The heavy addition of damson and blackcurrant drives the sensory profile, offering deep dark fruit intensity and a refined, vinous acidity. Expect a rustic, grainy backbone typical of the style, elevated by spicy Saison yeast esters and the earthy, funky nuances of long-term barrel maturation. The result is a highly attenuated, effervescent experience where the tannic skins of the berries provide a structured, dry finish that complements the farmhouse-driven complexity and moderate hop character.

Appearance. Deep ruby to burgundy-purple with exceptional brilliance. Topped by a persistent, fine-beaded pinkish-white head that leaves delicate Belgian lace. Effervescent carbonation is visible.

Aroma. High intensity, dominated by rich blackcurrant and jammy damson plum. Beneath the fruit lies a complex web of spicy black pepper, floral Continental hops, and a subtle farmhouse funk. Light grainy malt and a faint toasted oak note from the barrel aging provide a sturdy base.

Taste. Initial impression is tart and refreshing, led by intense dark berry flavors and stone fruit skin. Low grainy malt sweetness is quickly overtaken by moderate acidity and spicy yeast phenols. Hop bitterness is moderate, though fruit tannins and mixed fermentation acidity provide a significant portion of the dry, crisp balance. The finish is remarkably dry and lingering with a fruit-skin tartness.

Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation. A light, pleasant tannic astringency from the fruit skins is present. Alcohol warmth is light and well-integrated.
