Blender.

This complex Saison showcases a masterful blend of five mixed-fermentation ales aged in red wine French oak for up to eighteen months. A vibrant sensory profile emerges from the heavy conditioning on Tayberry, Honeyberry, Redcurrant, and Black Lime. The aroma is a pungent tapestry of forest fruits, zesty citrus, and vinous oak. On the palate, a sharp but refined acidity leads, offering layers of tart red berries and an earthy, concentrated citrus depth from the Black Lime. The wood aging contributes subtle tannins and a bone-dry, sophisticated finish, beautifully balancing the rustic grain and spicy yeast character of the base ale.

Appearance. Deep ruby to garnet (15-20 SRM); moderate pink-hued foam with fine bubbles and fair retention; hazy to opaque due to heavy fruit conditioning.

Aroma. High intensity; dominant notes of tart Redcurrant and ripe Tayberry. The fermentation profile is complex with lactic acidity and earthy Brettanomyces funk (hay, leather). Distinctive musky, concentrated citrus from Black Lime and moderate vinous notes from red wine French oak. Malt is low and grainy.

Taste. Initial impression is sharply acidic and fruit-forward with Honeyberry and Redcurrant flavors. Hop flavor is low, but the balance is shifted toward fruit acids and tannins. Mid-palate reveals an earthy, savory citrus character from Black Lime. Finish is bone-dry and lingering with a mix of berry skin tartness, spicy yeast phenols, and subtle oak tannins.

Mouthfeel. Medium-light body with high, effervescent carbonation. Refreshing and prickly on the tongue. Noticeable tannic astringency from the fruit skins and French oak; alcohol warmth is very low and well-integrated.
