Blender. Levitation is a sophisticated Wild Specialty Beer that artfully balances three years of barrel-aged mixed fermentation Saison with the vitality of fresh Saison. The addition of 380g/l of raspberries dominates the sensory profile, offering an intense, jammy red fruit character. Brettanomyces funk provides layers of leather and hay, while the extended wood aging contributes subtle oak tannins and structural depth. The sharp lactic acidity typical of a mixed-culture fermentation highlights the fruit's natural tartness without overshadowing the delicate peppery esters of the base Saison. It finishes remarkably dry and crisp, showcasing a masterful interplay between aged complexity and vibrant fruit intensity.
Appearance. Deep ruby red with a vibrant pink-hued head; moderate to low head retention with light lacing. Slight haze is present, though the beer maintains a jewel-like clarity in the glass.
Aroma. High intensity of fresh, seedy raspberries and red currant. Moderate funky notes of leather, barnyard, and earthy Brettanomyces, supported by a light lactic sourness. Very low cracker-like malt and a touch of neutral oak wood.
Taste. Leading with a sharp, bright raspberry tartness that is assertive but well-integrated. The fruit flavor is deep and jammy, though entirely dry with no residual sweetness. A moderate lactic acidity follows, paired with earthy funk and a hint of peppery phenol from the Saison yeast. The finish is bone-dry with a lingering tart fruit skin and mild wood tannin character.
Mouthfeel. Medium-light body with moderate-high carbonation that provides a prickly, refreshing scrub on the palate. Low alcohol warmth. A light tannic astringency from both the raspberries and the three-year barrel conditioning adds a drying structure.
