Blender.

Evocations presents a sophisticated fusion of traditional farmhouse character and vibrant fruit. The interplay between three-year barrel-aged mixed fermentation saison and its fresh counterpart creates a backdrop of rustic funk and nuanced oak. At its core, the heavy addition of sour cherries and rhubarb drives the profile, offering a sharp, bright acidity and a deep, multifaceted fruitiness. Expect a tapestry of tart stone fruit, earthy tannins, and a vegetal brightness characteristic of fresh rhubarb. The finish is remarkably dry and effervescent, staying true to its Saison roots while showcasing the complexity of long-term wood aging and assertive fruit conditioning.

Appearance. Deep pink to reddish-amber; 10-15 SRM. Pours with a moderate, pink-tinted ivory head that settles into a fine ring of Belgian lace. Hazy and unfiltered with high effervescence.

Aroma. High intensity with a complex blend of tart cherry and vegetal-sour rhubarb. Moderate lactic acidity and leather-like funky esters from the mixed fermentation. Subtle notes of oak, vanillin, and a peppery yeast character. Low grainy malt presence in the background.

Taste. Initial impression is sharply acidic and dry. Prominent flavors of tart cherry and acidic rhubarb dominate the mid-palate, supported by a rustic, grainy malt backbone. Very low hop bitterness, as acidity provides the balance. Fermentation character includes black pepper and subtle barnyard funk. Finish is bone-dry and lingering with a touch of oak tannin.

Mouthfeel. Medium-light body with very high carbonation providing a crisp, effervescent sting. Light alcoholic warmth. Notable but pleasant astringency from the fruit skins and barrel aging. No syrupiness; lean and refreshing.
