Highlighting its complex character, the Madagascan vanilla pods provide a smooth, creamy sweetness that rounds out the intense roasted malt base. Appearance. Opaque, jet black (40+ SRM) with a dense, persistent deep tan head that leaves thick lacing on the glass; high viscosity is evident through prominent, slow-moving legs.
Aroma. High intensity and complex; rich layers of bittersweet chocolate and espresso roast are complemented by prominent maple and bourbon-soaked American Oak. Fragrant Madagascan vanilla adds a creamy top note, while subtle esters of dark cherry and prune emerge behind the aromatic Peruvian Criollo nibs.
Taste. Initial impression of decadent dark chocolate and sweet maple, followed by a complex mid-palate of toasted oak and floral vanilla. The roast provides a firm, coffee-like bitterness that balances the lactose and residual sugars.
