Mercury Saison is a sophisticated assemblage of rye-based saisons matured in Chardonnay oak barrels, delivering a masterful balance of rustic farmhouse character and vinous elegance. The sensory experience is lead by the distinctive, spicy snap of rye, which harmonizes with the black pepper phenols and pome fruit esters of the yeast. The Chardonnay barrels contribute refined layers of white grape, soft vanilla, and a whisper of oak tannin, elevating the complexity. Effervescent and bone-dry, this beer showcases a crisp bitterness that highlights the earthy grain profile, finishing with a refreshing, lingering spice and a hint of white wine character.
Appearance. Deep gold with a slight orange hue and a persistent haze from the rye; crowned by a dense, rocky, ivory head that leaves intricate Belgian lace.
Aroma. High aromatic intensity featuring a complex blend of black pepper spice and citrus esters. Distinctive notes of white grape and subtle vanilla from the Chardonnay barrels are layered over a rustic, grainy rye backbone and low floral hops.
Taste. Initial impression of crisp, grainy rye spice followed by a wave of apricot and lemon esters. The Chardonnay barrel aging introduces a light vinous tartness and subtle oak tannins. Bitterness is moderate but accentuated by a very high attenuation and a bone-dry finish. Lingering peppery aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Prickly on the tongue with a slight tannic dryness from the wood and a clean, refreshing finish without astringency.
