Blackout Brewing Vilify

Vilify presents as a monumental Imperial Stout, defined by its twelve-month maturation in Sazerac Rye barrels. The sensory profile is dominated by an intense interplay of scorched earth, espresso, and bittersweet chocolate, lifted by the distinctively spicy, peppery character of the rye whiskey. Deep layers of black cherry and molasses emerge alongside charred oak and vanilla undertones. At 12% ABV, the beer offers a sophisticated warmth that complements its dense, velvety texture. The finish is long and complex, weaving together roasted grain bitterness with a lingering vinous quality, embodying a harmonious balance between aggressive barrel influence and traditional dark malt richness.
Appearance. Jet black and completely opaque. It pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident through slow-moving legs on the glass.
Aroma. High intensity aroma featuring a rich blend of dark chocolate, roasted coffee beans, and black licorice. The Sazerac Rye barrel influence provides a sharp, spicy whiskey note, accompanied by toasted oak and a hint of vanilla. Moderate esters of dried figs and prunes are present, alongside a clean, warming alcohol presence.
Taste. The initial impression is a massive wave of dark roasted grain and cocoa, followed immediately by the spicy pepperiness of rye and oak tannins. Medium-high bitterness from both hops and roasted malts provides structure. Flavors of molasses and dark-fruit leather lead into a moderately sweet mid-palate that dries out towards a warming, bittersweet finish with a lingering roast character.
Mouthfeel. Full to very full-bodied with a luscious, chewy, and velvety texture. Carbonation is low to moderate, providing just enough lift to the dense liquid. A smooth, significant alcohol warmth is present but well-integrated.
