The sensory profile is dominated by the rich, dark-roasted depth of coffee and a layered cinnamon profile featuring floral C5 Alba, spicy Cassia Bark, and delicate Ceylon. Aging in Fiji Rum and Auchentoshan Whisky barrels imparts deep notes of molasses, charred oak, and a distinctive peat-kissed maltiness. On the palate, the high-ABV warmth is beautifully integrated, carrying flavors of dark chocolate and vanilla. The finish is long and warming, balancing the intense spice and spirit character with a robust, velvety malt backbone.
Appearance. Opaque, ebony to jet black (40+ SRM). The head is thick and persistent, deep tan to mocha-colored, leaving dense lacing as it recedes. Clarity is masked by the extreme depth of color.
Aroma. High intensity. Strong notes of freshly roasted coffee and a multifaceted cinnamon punch—woody, sweet, and spicy. The barrel influence is prominent, offering Fiji Rum’s tropical brown sugar and Auchentoshan Whisky’s subtle heather and cereal notes. The base Imperial Stout provides a backdrop of dark chocolate, toasted malt, and dark dried fruits.
Taste. Bold initial impression of espresso and bittersweet chocolate. The three varieties of cinnamon provide a complex, warming mid-palate spice without being harsh. Barrel aging adds layers of charred oak, vanilla, and a hint of smoky whisky. Bitterness is moderate to high, derived from both hops and roasted grains, balancing the 12% ABV and residual sweetness. The finish is lingering and decadent, with a clean spirit warmth.
Mouthfeel. Full-bodied and viscous with a velvety, coating texture. Carbonation is moderate to low, enhancing the richness. A significant but smooth alcohol warmth is present, reflecting the 12% ABV, with no perceptible astringency from the spices.
