Blackout Brewing

Stereotrip is a bold Double IPA that showcases an intricate blend of Idaho 7, Idaho Gem, and Simcoe Cryo hops. The sensory profile is defined by an intense wave of candied red fruit and sweet cherry from the Idaho Gem, layered with the pungent pineapple and zesty citrus notes of Idaho 7. Simcoe Cryo anchors the experience with deep resinous pine and passion fruit undertones. On the palate, a clean, neutral malt backbone supports a firm, assertive bitterness that balances the 8% strength. This high-impact ale remains remarkably drinkable, finishing dry with a lingering botanical and tropical hop trail.

Appearance. Deep gold to light orange (7-9 SRM). Pours with a moderate, persistent off-white head that leaves tight lacing. Generally clear, though a very faint hop haze may be present from the dry-hopping.

Aroma. Intense hop-forward bouquet featuring distinct notes of crushed pine needles, ripe mango, and grapefruit peel. Idaho Gem provides unique sweet berry and stone fruit esters, while Idaho 7 adds earthy pineapple. Low, clean, bready malt supports the hops without adding sweetness.

Taste. Dominant hop flavors of citrus zest and resinous pine meld with tropical fruit punch. The bitterness is high but smooth, avoiding harshness. The malt is soft and unobtrusive, providing a light toasted grain character. Finishes dry with a long, resinous aftertaste and a clean fermentation profile.

Mouthfeel. Medium body with a smooth, slightly oily texture from the heavy hop oils. Carbonation is medium-high. A gentle, well-integrated alcohol warmth is present, reflecting the strength without being hot or solventy.
