This Imperial Stout-based Spice, Herb, or Vegetable Beer offers a profound sensory experience dominated by a massive addition of Yume coffee. The aroma is a rich tapestry of freshly roasted beans and bittersweet cocoa nibs, layered over a deep, dark malt foundation. On the palate, the coffee provides intense roasted depth, while the cocoa nibs contribute a luxurious chocolate velvetiness. A subtle floral lift from the honey balances the 11% ABV warmth, preventing the finish from becoming overly heavy. Expect a complex interplay of espresso, dark chocolate, and a whisper of wildflower honey in this viscous, midnight-black ale.
Appearance. Opaque, midnight black (SRM 40+). A thick, persistent tan head with excellent retention leaves intricate lacing on the glass.
Aroma. High intensity aroma of freshly ground Yume coffee and dark chocolate from the cocoa nibs. Background notes of toasted bread, dark caramel, and a delicate floral honey sweetness. Hop aroma is not perceived.
Taste. Dominant espresso and dark chocolate flavors from the custom-roast coffee and cocoa nibs. Moderate bitterness from roasted grains and coffee beans is balanced by a residual honey sweetness. Deep malt character suggests burnt sugar and dried fruits. The finish is long and warming with a clean fermentation profile.
Mouthfeel. Full, viscous body with a creamy, coating texture. Carbonation is moderate-low. Noticeable, smooth alcohol warmth is present without being harsh or fusel. Very low astringency from the coffee.
