This Imperial Stout presents a decadent sensory profile inspired by high-end pastry. Aged in Wild Turkey barrels, it leads with deep aromas of bourbon, charred oak, and vanilla, layered over rich dark chocolate and roasted chestnuts. The addition of blackberries provides a sophisticated dark fruit contrast to the velvety lactose sweetness. On the palate, intense flavors of bittersweet cocoa and espresso meld with the earthy nuttiness of chestnuts and a bright, berry-driven acidity. The finish is long and warming, balancing the 11% ABV with a lush, viscous texture and a lingering kiss of spirit-soaked wood.
Appearance. Opaque, jet black (40+ SRM) with a dense, persistent dark brown head. High viscosity is apparent in the slow-forming legs that coat the glass.
Aroma. Intense and complex. Rich notes of dark chocolate and roasted chestnuts dominate, complemented by significant bourbon character including vanilla, toasted oak, and caramel. High fruit esters of ripe blackberries provide a tart counterpoint to the sweet, creamy aroma of lactose and heavy roast.
Taste. Bold initial impression of bittersweet chocolate and espresso roast. The mid-palate reveals the earthy, savory depth of roasted chestnuts and the sweet-tart snap of blackberries. Moderate hop bitterness is masked by the thick, lactose-driven sweetness and rich malt. The barrel aging contributes significant bourbon flavor and a smooth, warming finish with lingering notes of dark fruit and oak.
Mouthfeel. Very full-bodied and viscous with a velvety, luscious mouthfeel enhanced by the addition of milk sugar. Low to moderate carbonation. Notable but well-integrated alcohol warmth from the 11% ABV and barrel aging.
