This Imperial Stout presents an imposing sensory profile, deeply enriched by ten months of maturation in Four Roses bourbon barrels. The experience begins with an intense collision of bittersweet chocolate and espresso-like roast, seamlessly integrated with the charred oak and spicy vanilla notes characteristic of the Four Roses heritage. Subtle undertones of dark fruits like prunes and figs emerge as the beer warms, supported by a significant but smooth alcohol presence. The finish is long and complex, balancing the assertive roasted bitterness against the sweet, spirit-forward depth of the bourbon, resulting in a harmonious and sophisticated sipping experience.
Appearance. Jet black (40+ SRM) and completely opaque. Pours with a dense, deep tan head that exhibits moderate retention and leaves viscous legs on the glass.
Aroma. High intensity and multi-layered. Dominant aromas of dark chocolate, roasted coffee beans, and black licorice are punctuated by prominent bourbon notes, offering vanilla, toasted coconut, and sweet oak. Moderate esters of raisin and dried plum provide a dark fruit background.
Taste. Intensely flavorful with an initial impression of dark cocoa and burnt grain. The mid-palate reveals complex layers of spicy bourbon, caramel, and vanilla from the barrel aging. Bitterness is firm and assertive, balancing the rich malt sweetness. The finish is lingering and bittersweet, with an aftertaste of dark-roasted malt and seasoned oak.
Mouthfeel. Full-bodied and velvety with a thick, chewy, and luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present but well-integrated, providing a soothing sensation without harshness.
