This Imperial Stout presents a decadent sensory profile inspired by Mexican chocolate, further complexified by aging in Wild Turkey bourbon barrels. The experience begins with intense aromas of roasted malt, bittersweet cocoa nibs, and warm cinnamon, seamlessly integrated with notes of charred oak and vanilla. On the palate, a velvety, full-bodied texture carries flavors of dark espresso and spicy chocolate, punctuated by a controlled, building heat from habanero chilies. The 11% ABV provides a significant, well-integrated warmth that melds with the bourbon character, culminating in a long, bittersweet finish that balances roast, spice, and spirit.

Appearance. Jet black and completely opaque (40 SRM). Pours with a dense, persistent dark tan head that exhibits moderate retention. High viscosity is visible through prominent legs on the glass.

Aroma. High intensity and complex; rich roasted grain, bittersweet chocolate, and aromatic cinnamon dominate. The barrel aging contributes distinct bourbon, toasted oak, and vanilla notes. Low esters of dried plum and raisin are present, with a clean, noticeable alcohol warmth and no detectable hop aroma.

Taste. Initial rich chocolate and espresso roast move into a mid-palate of sweet cinnamon and bourbon-soaked wood. A gentle, spicy tingle from habanero chilies provides a counterpoint to the malt sweetness. Bitterness is medium-high but balanced by the dense body. The finish is long and warming with lingering notes of charred oak, cocoa, and a soft chili heat.

Mouthfeel. Full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, accompanied by a slight, non-astringent capsaicin tingle from the chilies.
