Life Is Perception is an imposing Imperial Stout that commands attention through its year-long maturation in Palo Cortado barrels. This 11% ABV powerhouse weaves together deep layers of espresso and bittersweet chocolate with the sophisticated, nutty oxidation characteristic of rare sherry. The sensory profile is defined by a dense, velvety core of roasted grains, accented by complex notes of toasted hazelnuts, dried figs, and a whisper of leather. As the beer warms, the Palo Cortado influence provides a refined vinous depth that balances the intense malt sweetness, concluding in a long, warming finish that lingers with charred oak and dark fruit complexity.
Appearance. Jet black and opaque (40 SRM). Pours with a thick, creamy, deep tan head with moderate retention. High viscosity is visible as prominent legs on the glass.
Aroma. High intensity with a rich blend of bittersweet chocolate, roasted espresso, and black licorice. The Palo Cortado barrel adds distinctive layers of toasted almonds, hazelnuts, and a vinous, port-like quality. Subtle dark fruit esters of prune and raisin are present, supported by a hint of charred oak and smooth alcohol.
Taste. Initial impression is a massive wave of dark chocolate and roasted grain. The middle palate reveals the barrel character through notes of leather, dry wood, and toasted nuts.
