Imperial Stout 13 º
This Imperial Stout offers a luxurious, multi-layered sensory experience defined by its maturation in Cognac barrels and the addition of chopped Ugandan vanilla beans. The aroma is greeted by an intense fusion of bittersweet chocolate and espresso, enriched by the earthy, floral sweetness of the vanilla. On the palate, the Cognac contribution provides sophisticated notes of dried stone fruit and toasted oak, which meld seamlessly with a deep, roasted malt profile. A velvety, viscous texture carries the 13% ABV with a graceful, integrated warmth, concluding in a decadent finish where dark cocoa and creamy spice linger.
Appearance. Jet black and opaque (40+ SRM). It features a thick, persistent dark tan head with excellent retention. High viscosity is evident through prominent legs on the glass.
Aroma. High intensity; a complex blend of charred grain, black coffee, and dark chocolate. The Ugandan vanilla beans contribute a strong, earthy, and aromatic floral quality, supported by dark fruit esters of prune and raisin and a vinous, spirit-forward Cognac character.
Taste. Rich and intense; initial flavors of roasted malt and cocoa give way to complex layers of toasted oak and dried apricot from the barrel. The vanilla provides a smooth, creamy mid-palate. Bitterness is medium-high but well-balanced by significant residual malt sweetness. The finish is long and warming with a lingering bittersweet chocolate aftertaste.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, reflecting the high gravity without becoming solventy.
