This Double IPA radiates a modern, juicy intensity, driven by a heavy 20g/L dry-hop addition of Galaxy, Mosaic, and Simcoe. The aroma is a saturated blend of passionfruit, blueberry, and resinous pine, supported by the stone fruit esters of Vermont Ale yeast. A foundation of Maris Otter Extra Pale malt provides a subtle, biscuity sweetness that balances the firm, assertive bitterness without overshadowing the hop profile. Oats and Wheat create a plush, velvety mouthfeel, while the 8% ABV adds a clean, integrated warmth that rounds out this lively and vibrant hop-forward experience.
Appearance. Deep gold to light orange with a hazy, opaque appearance typical of modern hop-forward styles. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop character featuring passionfruit and pineapple from Galaxy, combined with the mango and berry notes of Mosaic. Simcoe provides a background of citrus zest and pine resin. Low, grainy Maris Otter malt and peach-like yeast esters provide a soft, supportive backdrop.
Taste. Initial impression is an explosion of tropical fruit and pine. The malt flavor is clean and soft, showing light bready notes. Hop bitterness is high but well-managed, leading into a medium-dry finish. Flavors of grapefruit, blueberry, and resinous sap from the Galaxy and Mosaic hops linger pleasantly in the aftertaste.
Mouthfeel. Medium body with a smooth, creamy texture contributed by the Oats and Wheat. Carbonation is moderate. A light, clean alcohol warmth is noticeable but refined, with no harsh astringency.
