This decadent Imperial Stout presents a masterful intersection of dark roasted grains and confectionery sweetness. A year of maturation in apple brandy barrels imparts a refined vinous character and whispers of dried orchard fruit, cutting through the dense layers of chocolate and rich butterscotch fudge. The base beer’s intense roast profile provides a sturdy backbone of espresso and charred oak, while the 11% ABV manifests as a sophisticated, integrated warmth rather than sharp heat. Decadent notes of molten chocolate and caramelized sugar linger on the palate, harmonizing with a firm bitterness that ensures a balanced, velvety finish despite the high gravity.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, creamy, deep tan head that shows moderate retention and leaves significant lacing. High viscosity is apparent through thick legs on the glass when swirled.
Aroma. High intensity and complex. Dominant aromas of dark chocolate, fudge, and heavy roasted coffee are layered with significant apple brandy notes of baked apple, vanilla, and toasted oak. Low earthy hop notes are buried beneath rich esters of raisins and prunes.
Taste. Intense initial impression of bittersweet chocolate and butterscotch. The mid-palate introduces a complex mix of roasted malt bitterness, charred grain, and apple-like fruitiness from the barrel. Bitterness is medium-high but balanced by the significant residual sweetness of the fudge and malt. The finish is long and warming with lingering notes of cocoa and oaky tannins.
Mouthfeel. Full-bodied and very chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the beer's creamy mouth-coating quality. A smooth, noticeable alcohol warmth is present but well-integrated.
