This Bourbon Barrel-Aged Imperial Stout presents a profound sensory depth, defined by its maturation in Heaven Hill and Wild Turkey barrels. A viscous, jet-black pour yields an intense bouquet of bittersweet dark chocolate, scorched espresso, and rich vanilla. The wood influence provides distinctive charred oak and caramel notes that meld seamlessly with dark fruit esters of fig and raisin. On the palate, a bold roasted malt presence is balanced by the spicy rye-like warmth of the bourbon and a firm bitterness. The finish is long and velvety, carrying a sophisticated alcohol warmth and a lingering cocoa sweetness that defines this complex Imperial Stout.
Appearance. Jet black and opaque (40+ SRM). Crowned by a thick, dark tan head with moderate retention and visible legs indicating high viscosity and alcohol.
Aroma. High intensity with rich dark chocolate, espresso, and black licorice. The bourbon barrels contribute heavy vanilla, toasted oak, and caramel. Esters of dried plums and raisins are present, with very low hop character and a smooth alcohol presence.
Taste. Intense flavors of bittersweet cocoa, burnt grain, and coffee. The barrel blend introduces honeyed oak and spicy bourbon notes. Medium-high bitterness balances the massive malt backbone. The finish is lingering and bittersweet with a complex interplay of roast and oak.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Low to moderate carbonation. Significant, smooth alcohol warmth provides a comforting glow without being sharp or solventy.
