This Double IPA delivers a vibrant sensory experience, blending Galaxy, Simcoe, and Enigma hops into a tropical tapestry. The aroma is dominated by intense notes of passion fruit, red berries, and white grape, supported by a piney resinous undercurrent. A grist of Pale and Pilsner malts, bolstered by Oats and Wheat, provides a soft, pillowy foundation that balances the assertive hop character. On the palate, juicy stone fruit and citrus flavors transition into a firm, clean bitterness. The fermentation profile, driven by 1318 yeast, adds subtle fruity esters that enhance the overall hop-forward, dry finish.
Appearance. Deep gold to light orange (7-9 SRM). Persistent, creamy off-white head with excellent lacing. Notable haze present from the inclusion of wheat and oats.
Aroma. High intensity hop aroma featuring prominent tropical fruit, passion fruit, and pineapple from Galaxy, alongside white grape and red currant notes from Enigma. Secondary notes of resinous pine and citrus from Simcoe are evident. Background malt is clean and grainy with a hint of breadiness.
Taste. Immediate impact of tropical and stone fruit flavors. Galaxy provides peach and passion fruit, while Enigma adds a complex berry-like depth. Bitterness is firm but smooth, never harsh. Malt flavor is low, presenting as soft crackers or floury wheat. The finish is dry with a lingering citrus and pine aftertaste.
