This Imperial Stout presents an opulent sensory journey, elevated by nine months in Romanian red wine barrels. The aroma is a decadent tapestry of dark chocolate and espresso, interwoven with spicy cinnamon and the floral sweetness of honey. Upon sipping, the palate is met with a velvety richness where creamy vanilla softens the intense roast. The barrel influence contributes deep vinous notes of dark berries and oak, melding seamlessly with the 12% alcohol warmth. As it breathes, complex layers of black currants and toasted grain emerge, leading to a long, harmonious finish that balances bittersweet cocoa with lingering spice.
Appearance. Jet black and completely opaque. Pours with a dense, dark tan head that shows moderate retention. High viscosity is evident through thick legs coating the glass (SRM 40+).
Aroma. High intensity. Deeply roasted malt provides scents of bittersweet chocolate and charred grain. Prominent spicy cinnamon and sweet vanilla aromatics are layered over floral honey. Significant vinous character from the wine barrels suggests dark cherries and plums. Alcohol is noticeable but smooth.
Taste. Initial impression is of intense dark chocolate and roasted coffee. The mid-palate reveals rich honey sweetness and creamy vanilla, followed by a sharp but pleasant cinnamon spice. Vinous red wine flavors and light oak tannins provide complexity. Bitterness is moderate to firm but balanced by the massive malt backbone. Finish is long, warming, and bittersweet.
Mouthfeel. Full to very full-bodied with a luscious, velvety, and chewy texture. Carbonation is low, enhancing the creamy feel. Noticeable but well-integrated alcohol warmth provides a soothing sensation without being sharp.
