Blackout Brewing

This Double IPA showcases a vibrant hop profile driven by intense Mosaic, Cashmere, and Wakatu additions. The 20g/L dry-hop rate provides a pungent sensory experience, leading with aromas of ripe mango, blueberry, and zesty lime. On the palate, the Mosaic hops deliver deep tropical and stone fruit complexity, while Cashmere contributes softer notes of melon and lemon peel. New Zealand Wakatu hops provide a distinct floral lime finish. Supported by a clean, lean malt backbone, the beer remains exceptionally drinkable with a firm bitterness and a smooth, warming 8% ABV presence that never veers into solvent territory, finishing dry and resinous.

Appearance. Pale gold to light orange (approx. 7 SRM). Brilliant clarity with a moderate-sized, persistent off-white head that leaves consistent lacing on the glass.

Aroma. High intensity hop aroma featuring prominent notes of tropical fruit (mango, papaya), mixed berries from the Mosaic, and a bright lime zest from the Wakatu. Subtle herbal and melon undertones from Cashmere are present. Malt is low and neutral, presenting as grainy-sweet, with a clean fermentation profile and a hint of smooth alcohol.

Taste. Initial punch of citrus and tropical fruit flavors. Mosaic brings blueberry and peach, while Wakatu provides a sharp lime zest character. Medium-high hop bitterness is firm but clean, balancing a soft, unobtrusive light-bread maltiness. The finish is dry to medium-dry with a lingering resinous and fruity aftertaste. Fermentation is clean with very low fruity esters.

Mouthfeel. Medium body with a smooth, slightly oily texture from the heavy hop load. Moderate-high carbonation provides a crisp edge. Alcohol provides a pleasant, gentle warmth without harshness or astringency.
