This modern Australian Sparkling Ale presents a vibrant twist on a classic style. Utilizing a clean yet ester-driven Kveik yeast, it bridges the gap between traditional effervescence and contemporary fruit profiles. Distinctive additions of Vic Secret and Enigma hops provide punchy sensory cues of fresh pineapple and tangy passionfruit, layered over a lean, grainy malt base. While maintaining the high carbonation and bone-dry finish expected of the style, the hop-forward character replaces traditional herbal notes with a bright, tropical intensity. It is a refreshing, highly-attenuated ale that balances a firm bitterness with a bouquet of sun-drenched southern hemisphere fruit.
Appearance. Deep yellow to medium gold (5-6 SRM). Tall, frothy, and persistent white head with tiny bubbles. Noticeable effervescence with slight haze if the yeast is roused during the pour.
Aroma. Moderate-high intensity featuring tropical hop notes of pineapple and passionfruit. Low grainy-bready malt character. Clean fermentation with light tropical esters from the Kveik yeast; no caramel or sulfur present.
Taste. Initial impression is crisp and dry. Low bready and neutral grain malt flavor is quickly overtaken by medium-high hop flavors of pineapple and passionfruit. Medium-high bitterness that feels firm due to high attenuation. Finish is very dry and clean with lingering hop bitterness.
Mouthfeel. Medium-light body with a very high, spritzy carbonation that provides a mouth-filling carbonic bite. Smooth but gassy; no alcohol warmth or astringency.
