This formidable Double IPA is a showcase of aggressive hopping, led by a star-studded cast of Citra, Simcoe, and Nelson Sauvin. The aroma is an intense punch of tropical fruit, crushed white grapes, and resinous pine. On the palate, Citra provides bright citrus layers, while Nelson Sauvin adds a distinct vinous character, all supported by a clean, neutral malt base that stays out of the way. Despite its 9% ABV, the beer remains remarkably drinkable with a dry, crisp finish and a lingering bitterness. Simcoe rounds out the profile with an earthy, woodsy depth, creating a complex and powerful sensory experience that demands respect.
Appearance. Deep gold to light copper (SRM 8-12) with a persistent, off-white, rocky head that leaves significant lacing. Clarity is excellent, though a very faint hop-induced haze is present.
Aroma. High intensity hop aroma featuring notes of passionfruit, gooseberry, and grapefruit, underpinned by a sharp resinous pine. A very low, neutral grainy malt character is present in the background, along with a clean, subtle alcohol sweetness.
Taste. Strong, complex hop flavors dominated by citrus zest and tropical fruit, followed by a persistent resinous pine and a unique white wine vinous quality. Bitterness is high and assertive but lacks harshness. The malt provides a clean, soft support without being sweet. It finishes very dry with a long, bitter, and citrusy aftertaste.
Mouthfeel. Medium-bodied with a smooth, almost creamy texture. Carbonation is medium-high, providing a lively prickle. A noticeable but well-integrated alcohol warmth is present, without any stinging or solvent qualities.
