Appearance. Pale orange-gold (5-7 SRM) with a slight to moderate haze from fruit additions; features a white, effervescent head with moderate to low retention due to acidity.
Aroma. High intensity of ripe, fleshy mango and zesty lime; moderate lactic sourness provides a sharp backdrop, while a faint, earthy chilli note adds complexity; no hop aroma or significant malt character present.
Taste. Initial burst of sweet mango and tart lime juice; the wild fermentation contributes a firm but clean lactic acidity. A distinct saltiness enhances the fruit profile, leading into a light, warming chilli heat that lingers in the throat. Finish is very dry and tangy with minimal hop bitterness and no malt sweetness.
